This cut is brillian for slow cooking! Low and slow in a 120 C (250 F) oven with a homemade dry rub, cook for about 3 - 4 hours altogether depending on your oven - but you will need drain off the fat a couple of times.

Tender and tasty but they do have a hig fat content, but they sure were a nice treat.

Grinding them is also a great idea - they would make great burgers.
